How to Make It

Preheat the oven to 190 degrees celsius and heat 1 tbsp of oil to an oven-safe skillet.

Add the onion and peppers to the pan and stir until soft (approx 5 minutes).

Next, add the garlic, salt, pepper, paprika and chilli flakes to the skillet and stir.

Add the tinned chopped tomatoes and leave to simmer for 5 minutes.

Turn the heat off and create 3 wells in the tomato mix. Crack the eggs into the wells and sprinkle some salt and pepper over the top.

Very carefully, place the skillet into the oven and bake for 8-10 minutes until the egg white is opaque. The egg should still wiggle a little in the centre.

Serve on its own or with bread on the side.
