Ferne's Egg Curry

How to Make It

Chop up 1/2 an onion.

Crush your garlic cloves.

Peel your fresh ginger and then grate.

Cook the garlic and ginger on a low-medium heat till soften.

Add in your garam masala, ground coriander, smoked paprika, ground cumin, curry powder, tomato puree and vegetable stock and stir.

Boil the eggs.

Chop the red chilli and fresh coriander.

Add mango chutney and greek yogurt to the curry sauce.

Peel the boiled eggs.

Add the curry sauce into a shallow bowl and top with eggs cut in half, and stir.

To serve, add the coriander, flaked almonds and currants and fresh red chillies.
