How to Make It

Add ½ the olive oil to a pan on a medium heat and fry the vegetables for 5-7 minutes until soft.

Whilst the vegetables are cooking, in a bowl whisk together the eggs with salt and pepper.

Remove the vegetables from the pan and set aside. Add the rest of the oil to the pan and pour in the egg mix, cooking for 2 minutes.

Add the cheese and vegetables to the centre of the egg, fold in half and serve.
