How to Make It
Preheat the oven to 200 degrees celsius and line a casserole dish with baking paper.
Spread the pepper and aubergine evenly across the casserole dish and drizzle with olive oil and cook for 15 minutes.
Pour the beans and tinned tomatoes into the dish and season with salt, pepper and paprika. Cook for a further 15 minutes.
Whilst the chilli is cooking, add the rice to a saucepan of boiling water and cook for 10 minutes.
Drain the rice and serve with the chilli.
