Sweet Potato Curry
How to Make It
Pour the olive oil into the pan on a medium heat and add the onions and tomatoes. Cook for 7-10 minutes until both are soft.
Next add the sweet potato, chickpeas and combine.
Then, add the garlic, cumin, paprika, garam masala, salt and pepper, cook for 2 minutes.
Pour the coconut milk into the pan and combine. Bring to the boil, then reduce to a medium/low heat and cook for 20 minutes. The sweet potato should be tender on a fork.
Remove from the heat and serve with rice or potatoes.
