How to Make It
Preheat the oven to 200 degrees celsius. Cut the top out of the peppers and scoop out the seeds then place on a baking tray.
Cook the rice in the microwave for the recommended time.
Add the olive oil to a medium heat pan and pour in the tinned tomatoes and pesto. Cook for 2/3 minutes.
Pour in the rice and coat with the tomato mixture. Turn off the heat and crumble the feta into the mix.
Spoon the rice mixture into each pepper until full. Then cook for 30 minutes and serve.
