How to Make It

Place the couscous in a bowl or jug, pour in the stock and oil, then stir. Cover the couscous with cling film and leave for 10 minutes. Uncover and fluff the couscous.

Preheat the oven to 200 degrees celsius and place two sheets or baking paper next to each other on a baking tray.

Divide the couscous between the baking paper and place the salmon on top.

Add the herbs, salt and pepper to the salmon and surround with the tomatoes.

Fold the baking paper and twist the edges to seal, cook for 15 minutes.

Serve in the baking paper.
