Red Pepper & Mozzarella Parcel

How to Make It

Preheat the oven to 180 degrees celsius and line a baking tray with parchment paper.

Add the olive oil to a medium heat pan and add the peppers and tomatoes. Cook for 10 minutes, stirring occasionally.

Sprinkle salt and pepper as required.

Whilst the vegetables are cooking, divide puff pastry into 4 rectangles on the baking tray.

Evenly spread the vegetable mix between to 4 rectangles, only adding them to one side. Leave 1cm around the edge.

Tear the mozzarella and distribute between the 4 rectangles.

Fold each rectangle over, use a fork to seal the edges. Then use a brush to lightly coat each pastry with the beaten egg.

Bake for 15 minutes until golden, then serve.
