Pesto Cod with Lentils

How to Make It

Using a food processor, blitz the garlic, basil, pine nuts, ½ lemon juice and olive oil to make the pesto.

Heat the oven to 180 degrees celsius and line an oven tray with baking paper. Coat both sides of the cod with the pesto and cook for 10 minutes.

Heat a non-stick frying pan and cook the tomato for 2 minutes. Then, pour in the puy lentils and use the remaining lemon juice.

Remove the cod from the oven and serve with the lentils and tomato.
