How to Make It

Heat the tbsp of olive oil in a medium heat pan and add the chopped onions. Cook for 3-5 minutes until golden.

Add the mushrooms, garlic, salt, pepper and paprika, then cook for 5 minutes, stirring occasionally. .

Pour in the stock, bring to the boil and then leave to simmer for 5 minutes.

Stir in the double cream or almond milk and cook the rice in the microwave.

Serve with vegetables of your choice.
