How to Make It
Heat the olive oil in a frying pan on a medium heat and add the onion, stirring until soft and golden.
Add the carrots and cook for a further 2 minutes.
Stir in the garlic, then add the tomato paste, tinned tomato, vegetable stock, lentils, herbs, salt and pepper.
Bring to the boil, then leave to simmer on a low heat for 30-40 minutes, stirring occasionally until the bolognese has thickened.
