How to Make It
Mix together the flour, sugar, cinnamon, ginger and baking powder in a bowl.
In a separate jug, beat together the egg and milk until combined.
Gradually add the dry ingredients to the jug and mix until it forms a smooth batter.
Add a splash of olive oil to a pan and place on medium heat.
Add 1 ladle of pancake mix to the pan and cook for 2-3 minutes until bubbling. Then flip and cook for a further minute.
Serve with toppings of your choice.
