Tuna and Chickpea Salad
How to Make It
Shred the carrot with a grater.
Add the tuna, sweetcorn and chickpeas into a bowl.
Add the chopped cucumber and tomatoes.
To make the dressing, juice the lemon.
Add a tablespoon of olive oil, balsamic vinegar, a pinch of salt, cracked black pepper.
Mix together the salad.
Slice the avocado and mix.
Serve with leaves.
