Salmon & Green Veg Parcels

How to Make It

Lay salmon on foil, making a foil boat and sealing the sides.

Season with salt and pepper and add some mint to the fillets.

Add the veg into the parcels, add in lemon juice and a splash of water.

Seal the tops and leave a gap to allow the steam to come out.

Add to a baking tray. Preheat the oven to 180-200°.

Cook for 13-15 minutes.

Garnish the fillets with the remaining mint.

To serve alongside steamed new potatoes.
