How to Make It

Parboil the potatoes in cold water for 15 minutes until soft. Then drain and leave to cool.

Preheat the oven to 200 degrees celsius. In a frying pan, add the olive oil and on a medium heat, cook the onion for 4-5 minutes until golden. .

Add the carrots and cook for a further 5 minutes until tender .

Place the vegetables in a large 2 litre ovenproof dish..

Cook the meatballs in the frying pan for 3-5 minutes until golden on the outside.

Place the meatballs in the ovenproof dish and cover with gravy..

Sprinkle salt, pepper and thyme over the top of the mix..

Thinly slice the potatoes and layer over the top of the meatballs..

Cook for 20-25 minutes until the potatoes begin to crisp..
