How to Make It

Preheat the oven to 200 degree celsius. Place the potatoes on a baking tray and drizzle with ½ of the olive oil. Season with salt and pepper and cook for 30 minutes, turning half way.

Meanwhile, in a bowl combine the breadcrumbs, salt, pepper, lemon zest and parsley. .

Once the chips are cooked, take out of the oven and place the fish on the same tray.

Press the breadcrumb mix onto the top of the fish and drizzle over the remaining olive oil.

Cook for 10 minutes then serve with vegetables of your choice.
